Do you have a recipe for stuffed french toast that's not sugary?

My mom keeps making it with jelly, andI don't like jelly because it's too sweet. I'd like some with like herbs or something inside, and not sweet.

Also I'm vegetarian. I eat eggs though.Do you have a recipe for stuffed french toast that's not sugary?
You should try a savory version then. Here is one I have been making for years.

2 thick slices (about an inch and a half) egg bread, or French bread

2 scrambles eggs

2 slices Jarlsberg (baby swiss) cheese

1 egg, lightly beaten

A splash milk

2 tablespoons butter

Make a slice in the top of each slice of bread and cut about 3/4 of the way through the slice to form a pocket. Stuff one of the eggs %26amp; cheese into the pocket, secure with a toothpick.

Place a medium-size nonstick skillet over medium heat and melt the butter. Combine the beaten egg in a shallow bowl or dish with the milk. Add the stuffed bread to the egg mixture and coat both sides in the egg for about 20 seconds.

Place the egg-soaked bread in the skillet and cook on both sides until golden brown. Serve with a small bowl of syrup alongside for dipping, if desired.

Or you can try this.

4 slices of thick bread, halved diagonally

4 eggs

1 and 1/2 C milk

1 onion, finely chopped

a bunch of fresh spinach leaves, chopped

1 carrot, grated

a small bunch of coriander, chopped

salt and pepper to taste

oil or butter for greasing the pan

Beat the eggs and milk together. Except oil, add all the other ingredients and whisk well.

Heat a well greased pan. Dip the slices of bread, do not make them too soggy, one at a time in the mixture and place them on the pan.

Flip and cook till the slices have browned on both sides and the egg has cooked through.

Try this with grilled veggies too, use your imagination.Do you have a recipe for stuffed french toast that's not sugary?
Monte Cristos are stuffed french toast they are meat and cheese, so for vegetarians use cheese and say veggie bacon or sausage maybe ?
you can stuff your french toast with whatever you want to. slices of fruits(slight cooked to soft them), cottage cheese, yogurts.applesauce, flavored sauces.
