add a little vanilla flavor to the egg mixture - it makes all the difference to me.

You can also sandwich fruits and ricotta to make a ';stuffed'; french toast

cinnomin and syrup
There are a multitude of variations. Begin with a basic recipe and add any spices you like. This is one dish that is difficult to mess up. Just add things that taste good and it will taste good. Add things like cinnamon, vanilla, honey, cream instead of milk, any kind of extract you fancy(orange extract with honey, cinnamon and a dash of allspice sounds good.) Of course you could add fruit juices instead of extracts. Also try using different types of breads like cinnamon raisin or other types of fruit breads. I've heard that baking the slices instead of frying them makes for a crispier and chewier toast.
It's good to start with something other than just regular plain old bread. Like the other person said, its awesome to put Cinnamon into the mix. But, my kids love to put peanut butter on then maple syrup before eating. My husband really enjoys it too.
I found this on the Food Netword. Instead of using bread use cresents (I hope I spelled that right. Anyway the cresents that you get at Burger King for breakfast.) Then you just dip them in your batter like you would normally do with some cinnamon and vanilla. Then brown it in a pan. It really is delicious.
Mind you, I haven't tried any of these recipes, but I've liked most of the recipes I've found at verybestbaking.com. I hope you find one you like.
1 Try adding sugar and a dash of cinnamon. Yum!

2 Vary the bread you use, try a fruit loaf or a brioche.

3 Be extravagant and use cream in the mixture rather than milk.

Good luck!
use challah bread(sliced 1';thick) soaked in a ';custard'; of eggs, milk(cream or half and half) vanilla, cinn and then coat with crushed corn flakes. Cook in a pan with some butter and finish them off by baking them on a cookie sheet in the oven for about 15 min.
take 2 pieces and put pudding in the middle
Try using raisin bread. Make sure it soaks up all of the liquid. I mix half and half and eggs and soak the bread in that.
try putting a little vanilla and cinnamin in the egg and milk mixture
