FRENCH TOAST
3 eggs, beaten
1/4 cup milk
1/2 teaspoon vanilla, optional
1/2 teaspoon cinnamon
10 slices bread
In a large bowl, mix beaten eggs with the milk, vanilla and cinnamon. Dip a slice of bread into mixture then place on a heated griddle that has been sprayed with nonstick cooking spray. Cook for 1-2 minutes on each side on medium / medium-high heat or until desired doneness.

I just crack 1 egg in a shallow dish, pour milk just to cover the egg white part (in other words, don't drown the egg in the milk, just use a little) then I sprinkle cinnamon on top (as much as you want) Wisk all that up. Put a bread slice in the mixture and turn it over to make sure the other side gets coated well too. Heat up your non-stick pan with a little bit of oil. Let excess mixture drip off a little. Put your coated bread slice in the pan and cook till egg mixture has set up and your french toast gets golden brown. (This mixture should be enuf to coat 2 slices of bread.) Repeat with another slice of bread. Enjoy!

2 eggs whipped up with about 1/2 cup of milk, about 1/4 tsp vanilla extract, a teaspoon of sugar, and a dash or two of ground cinnamon.
Do not soak the bread in the batter - just dip it in and out, letting the excess drain off. I like using a heavier/heartier white bread than the usual white junk bread - but I guess that's personal preference.
Fry the bread in a pan using a slight amount of oil or butter on a medium heat.
Serve with butter and real maple syrup.

4 slices of challah, brioche or stale Puglisi loaf, 3/4-inch thick
1 pint strawberries, hulled and halved
1 tbsp sugar
confectioners鈥?sugar
Directions
In a medium bowl, mix together strawberries, sugar and 1 tsp of water. Set aside. Whisk together eggs, milk, cinnamon, and vanilla in a shallow baking dish. Soak challah slices in the egg mixture for 5 minutes, turning several times. In a large skillet, melt butter over moderate heat. Add challah slices and cook until browned, about 5 minutes per side to ensure bread is cooked throughout. Transfer toasts to plates and top with strawberries. Dust with confectioners鈥?sugar. Serves 2.
Orange French Toast
Servings = 2 | Serving size =2 slices toast
This recipe can be multiplied by 2.
Leftover French Toast is not very good. This batter doesn鈥檛 keep well.
3 ounces egg substitute
2 tsp Grand Marnier orange liqueur
1 Tbsp Splenda
1 Tbsp 2% milk
1/4 tsp pure vanilla extract
1/4 cup orange juice
1/4 tsp grated orange peel
4 slices sourdough bread
2 tsp (per serving) Take Control Light Spread
2 Tbsp honey
1/2 tsp Grand Marnier
Place the egg substitute, Grand Mariner, Splenda, milk, vanilla extract, orange juice and orange peel in a medium-mixing bowl. Whisk until well blended.
Heat a non-stick griddle over medium-high heat. When the griddle is hot enough that a few drops of water will dance on the surface, reduce the heat to medium and place 4 slices of bread into the batter. Gently dunk and turn the bread until it is well coated and slightly soaked.
Place the 4 slices of soaked bread on the griddle and cook for about 3 鈥?4 minutes. Turn and cook on the other side.
Cook, turning occasionally, until both sides are golden brown. Depending on your stove or griddle you may need to reduce the heat slightly.
Remove and top with one teaspoon of Take Control Light spread on each piece of toast and serve one tablespoon of orange honey for every two slices of French toast
3 eggs beaten in a shallow bowl. Add 3/4 cup milk, TBS sugar and 1/4 tsp cinnamon. Coat both sides of thick sliced French bread in mixture and cook in pan with melted butter, margarine or oil (prefer butter) at med high heat until browned. Add more butter to pan if needed. Serve with maple syrup.

CANADIAN-STYLE FRENCH TOAST
3 large eggs
1 cup milk
1 cup brown sugar (dark or light)
1/2 teaspoon vanilla extract
1 loaf Texas toast (thickly sliced) bread
(subtitute regular slices for extra)
Beat eggs, milk, brown sugar and vanilla in a bowl large enough to accomodate a slice of bread.
Dip bread into mixture. In a frying pan with enough oil to cover bottom of pan, cook on medium heat saut茅 bread until it becomes golden brown and it springs back in middle.
Good finger food for kids of all ages. No need for Syrup!
