and cook on low/medium heat. Too high and the butter will burn. It's best to cook over lower heat for longer as the edges come out quite crispy that way.

Your pan or griddle should be the same temp as for cooking pancakes. Test the griddle by dropping a few drop of water on the surface. The water should bead. And, by the way, stove tops aren't like ovens. You can't set them for a specific ';temperature';. Every stove top is different.
