Cherry Pancakes
1 cup pitted sour cherries
1/2 cup flour
1 tablespoon sugar
pinch of salt
3 eggs
1/2 cup milk
1/2 teaspoon vanilla
3 tablespoon unsalted butter
confectioners sugar
sour cream
Preheat oven to 425 degrees. Sift flour, sugar, and salt into a mixing bowl. Add eggs and whisk until smooth. Add milk and vanilla, using the whisk to blend well. Stir in cherries and brandy. Place butter in heavy 12-inch straight-sided oven proof skillet or a 9- x 13-inch straight metal baking pan.
Place pan in preheated oven until butter is sizzling but not brown, about 3 minutes. Pour in batter, distributing cherries evenly. Bake until pudding is puffed and golden brown, about 20 minutes. Sprinkle with confectioners sugar. Serve hot with a spoonful of sour cream or plain yogurt.
PUFFED CHERRY PANCAKES

Pour batter over cherries and top with brown sugar. Bake in middle of oven for 20 minutes or until puffed and brown. Serve immediately.
NOTE: 2 apples, peeled and thinly sliced may be substituted for the cherries.
What I often do is, 3 cups pancake mix
3 cups cherry juice
1 to 3 cups cherries, seeds removed
2Tbs canola
Mix thoroughly with a flat whisk. Scoop 1/4 or less at a time, of batter onto a hot griddle and cook, till brown on one side. Turn and cook until brown, but not black.
But here's another idea for cherry pancakes:
Oatmeal Cherry Pancakes
2 cups complete pancake mix
(just add water)
1 cup Dannon鈥?Light 'n Fit庐 Cherry
Vanilla, Strawberry or Vanilla
Nonfat Yogurt
1/3 cup water*
1/2 cup oatmeal
1 Tbsp. canola oil
1 cup maple syrup, heated
1. In a bowl combine pancake mix, Dannon庐 Light 'n Fit庐 Cherry Vanilla, Strawberry or Vanilla Nonfat Yogurt, water and oatmeal and gently mix to blend. Heat a griddle and brush with oil. Ladle pancake batter onto griddle and cook 2 minutes. Turn pancakes and cook 1 minute. Repeat process with all batter. (Keep pancakes warm while making remaining).
2. Serve pancakes with heated maple syrup and more yogurt, if desired.
